Not your system (probably) but was surprised single cable systems like that existed, as I’d seen normal data+small power separated before but… There may be a model like this?
It’s a Librem Mini v2. But anyway, I am dumb. I checked the machine’s box and there was a cable in the box.

It’s possible that your NUC might actually support NVMe on that secondary port labeled “NGFF.”
I have the 12th Gen Intel NUC. Internal layout differs slightly in that the secondary storage port isn’t under the primary. But the port was labeled in such a way (the documentation too) that I could not be sure if it was SATA-only or NVMe-capable. The sticker on the port says “B-Key SATA” but some retailers (not all) mention PCIe 3.0 × 1. I put an Optane (M.2 2242) into it and it worked.
I wasn’t able to fit an NVMe drive in there. At any rate, SATA is plenty for /home. I can then bind-mount my ${HOME}/.local/ to a place on the / drive - usually I do /opt/local_home_dirs/${USER}. I usually do a setup like this. I like having my /home directory on an entirely separate drive from root, but I’ll use the secondary storage slot - which is the slower storage slot 99% of the time - and a cheaper, slower drive.
The SSD came in today!
Unfortunately, the screws that I have were too big to fit, so it’s literally held on by only the clamping force of the 2.5" mount on the NUC. I’ll have to rummage around my spare screws to see if I can’t find at least two screws to fit. For now it’s fine…
