Debian vs RHEL/CentOS for VMs

I’ve been using Proxmox on my server for a few days, but I realize I would rather use an actual desktop environment, run KVM and have VMs within for IOMMU/GPU passthrough and some light gaming.

Do you guys have any input on which distro would be best? I want:
-Stability
-Lightweight desktop environment
-Ability to run multiple VMs without much performance hit (I have a 16 core, 32 thread old Threadripper CPU and 64GB of RAM if that makes any difference).

I’m pretty familiar with PopOS since I’ve been using that for a while now, but I’m not sure that’s the best distro to use for hosting the VMs.

I’d say go for Debian. CentOS/RHEL 8 has a strange implementation of qemu 2.10 and I’ve struggled to get GPU passthrough working with it. It’s also a bit too restricted as a Desktop OS for my liking.
