Consolidating multiple servers (Debian/docker)

Good morning, just joined the forum. If this is in the wrong location please let me know (I did read the rules).

Looking to finally upgrade my main server Mobo/CPU/cooler to do everything that I’ve currently got spread across 4 low powered machines. Looking for some advice on hardware, specifically if consumer grade is ok or if I need to look at used enterprise equipment. Also haven’t used AMD CPUs since an athlon desktop 15 years ago, so wondering if Ryzen is a good option.

Main machine:
-3u Silverstone case, mATX only
-Old i3-2100 combo from eBay
-16G spare RAM at the time
-a few 8T HDDs mostly full of media
-headless Debian with mostly docker containers
Used for
-Jellyfin for myself and up to 3x family members at a time
-a few WordPress sites and nginx
-SMB access for data backups
-wireguard, DDNS, Omada controller, PiHole, Home Assistant, etc.

Mini 1:
-Optiplex 7050 MFF
-A 3x Minecraft servers for the kids. Max 5-10 players at once, generally on one instance at a time

Mini 2:
-Optiplex 7040 MFF
-Zoneminder for 3x 4k cameras

Pi:
-Banana Pi Pro
-PiHole primary instance

I would like to combine all of that into my main machine. I obviously need a modern processor with quick sync. I have a few cheaper GPUs sitting around to help with transcoding. h.265 at 1080p is not functional right now at all with such an old i3. I’m ok keeping zoneminder on it’s own machine and VLAN for security.

Will probably switch from purely docker into a hypervisor to make things easier and a little more professional. Would like to play around with a Windows VM and a GPU that I or the kids could use and avoid an expensive gaming PC in each of their rooms, but understandd that’s complicated and pricey.

I’m comfortable spending $4-600 for just a new Mobo, processor, and cooler so that I can use existing HDDs, spare DDR4 I have laying around, and PSU. We’re all used to gaming on budget desktops with 6th-8th gen Intel processors, and playing older games. But I would like to have a little room to expand in the future, since I built this on a budget and didn’t do that this time. But do I need 12c/24t? Should I look at a 12th gen i7 with e/p cores? My work laptop has a new i7 and it absolutely crushes my old hardware, but I’m not sure about specifics. Any compatibility issues with Ryzen? I’ve heard it didn’t play well with ESXi.
