For the corn tortillas:
Masa Harina
Flour (whatever kind you fancy)
Salt (a pinch)
Water
Use five parts masa harina to one part white/wheat/spelt/whatever flour. Add a pinch of salt (optional) and a little water (see video).
The rest is all just veggies and eggs. Check out the video and let us know what you think.

Looks good but I don't know when I'll find the time to make it. In the time it'd take to prepare and clean up I normally have 2 meals haha
