Since it was mentioned on the show which extinct animal do you guys think would taste the best if it was brought back to life? I'm kinda thinking something like a T-rex. It might taste like chicken.

Either a Cervalces Scotti or a Bison Antiquus. Both look quite tasty, are are quite extinct.
Pinta Island tortoise or "Chelonoidis nigra abingdonii" a specific species of Galapagos tortoise. last member died in 2012. I believe that the expeditions to the Galapagos often would take tortoises, and many of them were eaten by the sailors before making it to their destinations because they were so damn tasty.
