I know I've given long winded answers. But if you're playing 99% Skyrim - that kind of cements the option, in my view. I think a strong CPU and a single HIS 7950 is more than enough at 1440p. You'd probaby get close to a solid 60FPS. Don't overestimate the performance impact of 1440p. You can always buy a second 7950 if you're unsatisfied. All I am saying is don't crossfire off the bat, save money.
Obviously, listen to what other people might say. But I do play Skyrim, I do run mods, and I have a 1440p panel. This is just my experience.
