I´d like to shear a easy and healthy recipe for a barszcz soup.My friend who is ultra vegan gave it to me some time ago and eves since I'm not making it any other way.
- 2 medium onions
- 2 garlic cloves
- 6-7 small beets (big ones have almost no taste so don't bother buying them big)
- 1/4 of cabbage (about 200g)
- 1-2 carrots
- 2 bay leaves
- 4 grains of black pepper
- 2 tbsp wine vinegar
- fresh chopped parsley
- salt and freshly ground pepper to taste
Peel and chop the onions and garlic (for more intense garlic taste you can mace it). Peel and cut beets and carrots in to big chunks, shred the cabbage. Sauté onion and garlic for a while on little of water (you can use oil), of course, on low heat.
Add water, spices and bring to a boil. Add beets, cabbage, carrots and cook 20 minutes or until beets are soft.
Season with vinegar, salt and pepper and sprinkle over with chopped parsley.
