Are there any reasonably priced options for a 48 port 2.5GbE switch with 100GbE uplinks? This is for an embedded application, so highly flexible management options are of lesser importance to general stability and long-term support. Any option needs to support sustained rates of ~50Gbps.
TPlink / Horaco
The first “exact match” I found is the FS S5850-48XMG8C, costs a pretty penny though!
Three Mikrotik CRS326-4C+20G+2Q+RM and a Mikrotik CRS504-4XQ-IN are less expensive than the FS-switch.

Have you had experience of aggregating switches like that? Are there any significant implications for latency and throughput relative to a ‘single box’ solution?
I never had to worry about switching latency, no.
All I can say I that traditionally, you would have three tiers of switches in a network (Core, Aggregation, Edge). In the MikroTik-Scenario you have 2 tiers.
I also found you an alternative to the FS-Switch:
Arista 720XP-96ZC2
