some ive seen that were good (or that i remember being good when i watched them):
monster (deserves its own god-tier category)
berserk (comics only, the show adaptation sucked)
gundam wing
outlaw star
lupin III (well, technically the comics, but the show was alright too even tho it was heavily censored)
code geass
full metal alchemist
black lagoon
gantz

and here's some i was told were good, but then i watched them (the whole thing, to be fair) but they just sucked all over the place:
full metal panic
tenchi... anything
scryed
ghost in the shell
one piece (was interesting, but there was so much filler i just lost interest)
naruto (see above)
bleach (see above)
inuyasha (ok, didnt complete this one because it was just too bad)

ill add more later if i can think of any. as you can tell i dont have much patience for shows with immature characters trying to act cute.

Bakuretsu Tenshi was pretty good and half of Tenjou Tenge was hot. Too many episodes were focused on the pasta and frankly just got boring. Needed more episodes like Soichiro getting massacred by Masataka.
