So, my little sister got a tablet for Christmas from "Santa" and has recently had all her games be deleted just out of nowhere and she's a bit upset so I try to install them again and I get an "insufficient storage" message so I proceed to look on forums and nothing helps, so I try a factory reset and still, nothing.

Unfortunatley it seems like they didn't use the highest quality components for this device :(
At least on my android phone your Google account backs up all of your apps including app data. I would restore it and see if a backup of some sorts comes up. But looking at the history of this tablet I would say your out of luck.

It really depends on your budget, but generally any Nexus device is a good bet.

It was my parents that bought the tablet and because they're clueless they didn't do any research but i told them to this time, they are returning the tablet and i always do research before buying.
