So two builds I've worked on pretty hard... I'm going to go with one or the other and will be using it for gaming (ideally capable of maxing out graphics on majority of current games. (Obviously I can't afford to max out Cry Engine 3)
I would also like to do some video editing to continue posting videos to my Youtube channel (That'll mostly be MC and maybe a few other games in the future)

7950 eats the 660ti in almost everything for breakfast. Also the 8350 and 3570k are not that much different, except the 8350 is a little better imo.
No you dont need an ssd, they are convenient, but not neccesary.
Millions of people get by on computers without an ssd, dont let anyone convince you that you need one. If you want one, go ahead, but if you will have to cut gpu/cpu quality to afford it, dont get it, its not worth it imo
Ssd make differences in wait times, they wont noticeably improve fps in my experience. Its better at that budget to use that money for a better cpu\gpu setup, and you can max cryengine at 480p with everything on with the amd build
