Its fine for wattage however I've heard things about amps and such witchcraft. Not gonna lie PSU's are not my strong point. And neither are the 700 series GPU's.
The problem that I have with the supply that you have selected is that is it multi-rail. You are absolutely right, it isn't just about wattage.
If you look at any GPU, it will have a recommended power requirement. For a high-end card, this will be in the region of 500W and roughly 42-44 amps. However, this is not for the card alone. This is taking into account your entire system, in addition to the card.

Focus on the 12v rails. You've got v1, v2, and so on. This makes the supply "multi-rail". Ideally, you want a single 12v rail supplying the amps. This is better for voltage regulation. If you have poor voltage regulation, it can damage your components.
So, you would want 500-550W with the 12v@45 ideally for a single high-end card. And give or take 700W with approximately 12v@56-58 for two cards, by my best estimate.
Yep, that's a really good supply. 12v rail has 62amps. So you've got a lot of power there, more than what's needed for 760 SLI. A little headroom doesn't hurt.

So you have sufficient power for 760SLI. I would consider other PSUs, I am not the biggest fan of the CX series. Only because it is an entry level series. You can find similarly priced units which I would consider a better, safer investment. If you're confident with the CX, it will power everything just fine.
What's your budget. It is advisable to invest in a quality supply. Lesser units can degrade your components. Hopefully, the requirement won't stretch your budget.
The Rosewill Hive attracted my attention. It's modular and has support for SLI/CF. The only thing that wooried me is the 54 volt 12v rail. Is that enough?
