What would happen if lets say I have a gpu that has 2gb of ddr5 ram, but then I SLI'd or crossfire'd the 2gb card with a 4gb version like a 2gb 670 sli'd with a 4gb 670?

You would be able to use 2GB per.
No, I don't believe you can. I asked this same question before and received iffy answers. I did a little research and stumbled upon this thread...
