I am looking to build my first PC, I've only had consoles so far, I do not plan on editing, and may possibly try overclocking. I have a budget of approx 2,500 a little over is fine. I need everything including a mouse, keyboard, and monitor. Also down the road at some point I would like to get into water cooling.
I prefer Intel and Nvidia, and never have built a computer before. I am willing to wait a month or so for better parts to be available.

Do you want SLI or not? I was hoping for at least a single gtx 780, and upgrade to SLI in the future
If you were to do water cooling would you do the GPU(s) too? Yes, and ram, and anything else I can pointlessly watercool just cuz I want to. Though this may be a future expansion.
Would you like to go 2011 for a hexacore or the 4820k or Haswell? Whatever would have the best performance.

This build comes at total of $2365(That is including mail in rebates/promos/etc. and not including tax) You can over clock this right away if you wish too. The 140mm fan is for the from of the case so you can get good air intake and have nice airflow. Hopefully this helps you out and at least gives you a better idea of what you would want. Also, a 1440p monitor costs roughly $350-ish, so I opted for a smaller but a good 1920x1080p monitor from Asus.
if a 120hz is not available at a reasonable price 60hz will do, also if i would see better performance with 1080p then thats what i will do. I'd prefer 16gb of ram also at 1866 if possible
You need at least a single 1440p monitor with that 780. Anything less is an absolute waste for a card that powerful. Three 144hz 1080p monitors are also acceptable.
You can bring the price down in a few ways (cheaper case, cheaper monitor, cheaper PSU, downgrade to GTX 780, cheaper cpu, etc.). I included a higher wattage PSU to allow for SLI in the future, as well. 1600MHz vs 1866MHz ram won't make a noticeable difference other than on your wallet (I own two sets in two similar machines, near no difference). I also included the razer naga mouse, which is one of the best mice I've ever used. Anyone who says otherwise hasn't used one before.
Why is everyone going for the 4770k for a gaming rig? Get the Xeon or the i5... then shift the extra money elsewhere. Also, https://teksyndicate.com/news/2013/08/15/tek-syndicate-1440p-monitor-club - just get one of the XStars... you can get pixel perfect for just over $300.

To answer your first question, I personally wanted to max out the budget and work backwards. Unfortunately, I got sidetracked from doing that, so…yeah.
I also did up this one as I saw that you may want to venture into custom loop cooling. I picked the Maximus VI Formula because the motherboard itself can be liquid cooled and I thought that might be cool. If you didnt want that you could slide in something like the Gigabyte Z87X - UD4H and chuck a 4770k in there. Whatever floats your boat.
Awesome build, but why not a FX8350 instead? its a bit cheaper, and in therms of gaming performance, they are equal, i have an FX8350 my self and i like it.

Both thease builds are realy nice, but like Logan also mentioned, on the intel build you could also go cheaper, if you go for an i5-4670K instead of an i7-4770K, since you wanne do overclocking, the Xeon is not option then.
About the monitor grab an X-star with samsung pls panel inside they are great, or a shimian, with LG AH-ips panel.
