Hey guys I'm planning to buy one of those korean 1440p monitors (x-star), and right now I have in my rig a 7870 and a i5 2500k, would I need an upgrade in my GPU to play games at 1440p, and if I did, should use cf or sell my 7870 and get a new GPU, and also could I experience CPU bottleneck?
You can play games at 1440p, but you will have to turn down settings.
The 7870 is geared to 1080p gaming, so I would hesitate to recommend crossfire. As two 1080p cards won't be as capable as other cards. The 7950 is a 1080p card, but it is more than capable at 1440p. Largely because of the additional Vram et cetera.
i5 2500k is still a great choice for gaming. For dual GPUs or otherwise.
I also heard of some scaling issues when I play games down to 1080p with those monitors, is it true?
It's not a huge issue. Obviously, 1440p looks better in comparison. There are plenty of 27" 1080p monitors on the market, and people are happy to use those.
It should be more than acceptable. I use my 1440p for some 1080p content, and it doesn't look too blurry or anything.

7950 is going to be the cheapest I would suggest. The closest R9 equivalent would be the 280x. Useful for running mods, will give good performance at that resolution. If you have money burning a hole in your wallet, the 780 is a good buy right now.
You can use the 7870 in the meantime.
